After securing a location around the corner from Le Bristol that would draw businessmen, diplomats and elegant ladies who shop and lunch, his next move was to bring in Alain Carrère to cook. Most recently at Le Violin d’Ingres and just before that, Le Pamphlet,that was a very cool address in the Marais. I have a delicious ten-year old memory of M. Carrère’s culinary skills.
My friend Albert Nahmias has watched the baby-faced Alexandre mature over the years and we met on the sidewalk terrace for lunch. Having walked from the Café de Flore I was thirsty and Alexander selected a Taittinger Brut to rehydrate me and stimulate my appetite. His hosting skills are impeccable as you will be received with a smile and charcuterie.
It was a hot day and we opted for simple entrées: sliced tomatoes vinaigrette for Albert and for me the puff pastry, with red onions fondue, tuna and olives. No need to order wine, the champagne was fine.
We both were attracted to the fish choices and were delighted with our choices. Cod grilled a la plancha with roasted gambas, pimentos and baby shrimp for Albert and a filet of Saint-Pierre meunière for me.
I had just enough room for Orange crepes à la Suzette with a snifter of Grand Marnier. Mmm!
